Welcome to Restaurant Krijt, set in a stately mansion on the edge of the centre of Apeldoorn, with the Veluwe as our immediate surroundings. In our cosmopolitan kitchen, influences from all over the world meet produce from close by. We work as much as possible with what our own surroundings have to offer and give it a signature of our own with acidity, spices and surprising flavours.
That love for the produce, the season and the craft is what we share with our guests: in every flavour, on every plate.
Everything turns on respect for the ingredient. We love flavours you recognise, we cook with the seasons and we like to give our dishes a twist of our own.
That familiarity goes hand in hand with fine acidity, spices and citrus notes: sometimes subtly recognisable, sometimes surprisingly not, but always an enrichment of the dish.

The Veluwe is around the corner: woods, fields, orchards and kitchen gardens. Whatever is at its best there decides what happens in our kitchen that day. Not the calendar, but the season sets the tone.
Our philosophy
Krijt grew out of the vision of three-star chef Jacob Jan Boerma: a restaurant where young professionals are given the freedom, the trust and the guidance to develop a signature of their own.
